Bacon Wrapped Sausage Roll-Ups with Cheddar

Instructions

1. Preheat & Prep

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil, and place a wire rack on top if available (this helps the bacon crisp evenly).

2. Prepare the Filling

  1. In a mixing bowl, combine the raw bratwurst sausage (casings removed) with the shredded cheddar. Mix gently with your hands or a spatula until the cheese is evenly distributed.

3. Form the Roll-Ups

  1. Scoop out small portions of the sausage-cheddar mixture (about 1½ tablespoons each) and roll into short, thick logs or oval shapes. You should get about 16–18 pieces depending on size.
  2. Wrap each piece with a slice of bacon, stretching it slightly as you roll to wrap snugly. Secure with a toothpick if needed to keep the bacon in place during baking.
