🍰 Instructions
1️⃣ Make the Vanilla Wafer Crust
- Preheat oven to 325°F (160°C). Lightly grease a 9-inch springform pan.
- In a medium bowl, combine crushed vanilla wafers, sugar, and melted butter. Mix until evenly moistened.
- Press mixture firmly into the bottom and slightly up the sides of the pan.
- Bake for 10 minutes. Remove and let cool completely while you prepare the filling.
2️⃣ Prepare the Cheesecake Filling
- In a large bowl, beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, beating gently after each (do not overmix).
- Mix in mashed bananas, vanilla extract, banana extract, and sour cream.
- Stir in the flour until just combined.
- Pour filling over the crust and smooth the top.
3️⃣ Bake the Cheesecake
- Place the pan in a water bath or wrap in foil and bake for 55–65 minutes at 325°F (160°C), or until the center is just slightly jiggly.
- Turn off oven, crack the door, and let cheesecake rest for 1 hour.
- Remove and chill for at least 4 hours or overnight.
