Blueberry Breakfast Quesadilla

Instructions

  1. Prepare the filling:
    In a small bowl, mix the softened cream cheese with the honey or maple syrup. Stir in a pinch of cinnamon to enhance the sweetness and add a little warmth to the flavor. This will create a creamy, sweet spread that complements the blueberries perfectly.
  2. Assemble the quesadilla:
    Lay the flour tortilla flat on a clean surface. Spread the cream cheese mixture evenly over one half of the tortilla, leaving a small border around the edges. Sprinkle the fresh blueberries on top of the cream cheese, making sure to distribute them evenly. This will create a sweet, fruity filling that melts beautifully when cooked.
  3. Cook the quesadilla:
    Heat a skillet over medium heat and lightly coat it with cooking spray or a small amount of butter. Once the pan is hot, carefully fold the tortilla in half, encasing the filling. Place the quesadilla in the skillet and cook for 2–3 minutes on each side, or until golden brown and crispy. Use a spatula to gently press down on the quesadilla to ensure even cooking and a nice crispness on both sides.
  4. Serve:
    Remove the quesadilla from the skillet and let it cool for a minute before slicing it into wedges. The creamy center and sweet blueberries should be oozing out slightly, making for a perfect bite. Serve warm, with extra honey or syrup drizzled on top if desired.
