Boston Cream Pie Cheesecake

Instructions

1️⃣ Make the Crust

  1. Preheat oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until evenly coated.
  2. Press mixture firmly into the bottom of a 9-inch springform pan.
  3. Bake for 10 minutes, then set aside to cool while preparing the cheesecake filling.

2️⃣ Make the Cheesecake

  1. Reduce oven temperature to 325°F (160°C).
  2. In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and vanilla extract until well combined.
  4. Pour the cheesecake batter over the cooled crust, smoothing the top with a spatula.
  5. Bake for 45–50 minutes, or until the center is just set (a slight wobble is okay).
  6. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
  7. Remove from oven and refrigerate for at least 4 hours or overnight to chill completely.
