Instructions
1️⃣ Make the Crust
- Preheat oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until evenly coated.
- Press mixture firmly into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then set aside to cool while preparing the cheesecake filling.
2️⃣ Make the Cheesecake
- Reduce oven temperature to 325°F (160°C).
- In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add the eggs one at a time, beating well after each addition. Stir in the sour cream and vanilla extract until well combined.
- Pour the cheesecake batter over the cooled crust, smoothing the top with a spatula.
- Bake for 45–50 minutes, or until the center is just set (a slight wobble is okay).
- Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
- Remove from oven and refrigerate for at least 4 hours or overnight to chill completely.
