1️⃣ Prepare the Lobster Tails:
- Using kitchen shears, cut along the top of each lobster shell lengthwise. Gently lift the lobster meat up and rest it over the shell, keeping it attached at the base.
- Season the lobster meat with smoked paprika, salt, and pepper.
2️⃣ Sear the Lobster Tails:
- Heat olive oil and 2 tablespoons butter in a skillet over medium-high heat.
- When the butter is hot and foamy, place the lobster tails flesh-side down.
- Sear for 2–3 minutes until the surface is golden brown.
- Flip and cook the other side for another 3–4 minutes, basting with the pan butter, until the meat is opaque and fully cooked through.
- Remove the lobster from the skillet and set aside.
3️⃣ Make the Garlic Cream Sauce:
- Lower the heat to medium and melt 2 tablespoons of butter in the same skillet.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth and simmer for 1 minute to deglaze the pan.
- Stir in the heavy cream and Dijon mustard, whisking to combine.
- Simmer the sauce for 2–3 minutes until slightly thickened. Season with salt and pepper to taste.
4️⃣ Finish the Dish:
- Return the lobster tails to the skillet and spoon the warm garlic cream sauce over them.
- Simmer gently for 1 minute to reheat and meld flavors.
5️⃣ Serve:
- Plate the lobster tails and spoon extra sauce on top.
- Garnish with chopped parsley.
- Serve with your choice of steamed vegetables, mashed potatoes, or rice for a complete meal.
