1️⃣ Boil & Cool the Eggs
- Bring the eggs to a boil in a pot with salt and vinegar. The salt and vinegar can help with peeling the eggs later, but they’re optional.
- Once the water reaches a boil, reduce the heat and let the eggs simmer for 10 minutes. This will ensure they’re fully cooked with a firm yolk.
- Once the eggs are done, immediately transfer them to an ice bath to cool down. This simple trick makes peeling the eggs much easier!
2️⃣ Make the Filling
- Peel the eggs and slice them in half lengthwise. Gently pop out the yolks and place them in a bowl.
- Mix the yolks with the mayo, Dijon mustard, lemon juice, Cajun seasoning, and paprika. This creates the perfect creamy, flavorful filling with just the right amount of spice!
- Season with salt and pepper to taste. Don’t forget to taste test and adjust the seasoning to your liking!
3️⃣ Pipe It Like a Pro
- Spoon or pipe the yolk mixture back into the egg whites. If you’re looking to make them extra pretty, using a piping bag will create a more professional look and allow you to fill the eggs more neatly.
- Arrange the filled egg halves on a serving platter for a gorgeous presentation that’s sure to impress your guests.
