- 1 roll chocolate chip cookie dough
- 4 oz cream cheese, softened
- 1/4 cup sugar
- 1 egg yolk

- Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to ensure the cookies don’t stick and to make cleanup easier. This step will help your cookies bake evenly and give them a beautiful golden color.
- In a small bowl, beat the softened cream cheese with the sugar until smooth and well-combined. The cream cheese should be soft enough to mix easily, so if it’s a bit too firm, you can microwave it for a few seconds to soften it further. Once smooth, add the egg yolk and mix again until the filling is fully incorporated. This mixture will become your cheesecake filling, adding that creamy, tangy flavor inside each cookie.
- Now, take your roll of chocolate chip cookie dough and divide it into 12 equal portions. Flatten each portion into a round disk using your hands or a spoon. Each disk should be about 1/4 inch thick, large enough to encase the cheesecake filling inside.
- Next, spoon a small amount of the cheesecake filling (about 1 tablespoon) into the center of each flattened cookie dough disk. Be careful not to overfill it, as the filling might ooze out during baking. Once the filling is in place, gently fold the edges of the cookie dough over the filling and roll it into a ball, sealing the edges so the cheesecake filling stays inside.
- Place the stuffed cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading. You should have about 12 cookies in total. If you want an extra treat, you can press a few more chocolate chips onto the top of each cookie for an added touch of chocolatey goodness.
- Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown and the center is just set. The cookies will puff up a bit while baking, but they’ll settle as they cool. Be careful not to overbake, as you want the cheesecake filling to remain soft and creamy on the inside.
