Cheesy Bacon Ranch Quesadilla – A Crispy, Cheesy, Bacon-Lover’s Dream Recipe

Ingredients

  • For the Quesadillas:
    • 4 large flour tortillas (10-inch size; you can also use spinach or tomato tortillas for color)
    • 1 ½ cups shredded cheddar cheese (sharp cheddar for a stronger flavor)
    • 1 cup shredded mozzarella cheese (for that perfect melty stretch)
    • 1 packet ranch seasoning mix (or homemade ranch seasoning)
    • 8 slices cooked bacon, crumbled (for a crispy, smoky flavor)
    • 1 tablespoon butter (for toasting the quesadillas)
  • Optional Dipping Sauces:
    • Salsa
    • Guacamole
    • Sour cream

Instructions

  1. Prepare the filling: In a medium mixing bowl, combine the shredded cheddar cheese, shredded mozzarella cheese, and ranch seasoning mix. Add the crumbled cooked bacon and mix everything together to evenly distribute the bacon throughout the cheesy filling.
  2. Assemble the quesadillas: Lay a flour tortilla flat on a clean surface. Spread half of the cheese and bacon mixture evenly on one half of the tortilla. Fold the tortilla in half to form a half-moon shape. Repeat with the remaining tortilla and filling to make a second quesadilla.
  3. Cook the quesadillas: Heat 1 tablespoon of butter in a large skillet over medium heat. Once the butter is melted and the skillet is hot, place one quesadilla in the skillet. Cook for 2-3 minutes on each side, pressing down gently with a spatula, until the quesadilla is golden brown and the cheese is fully melted. Remove from the skillet and set aside. Repeat with the second quesadilla.
  4. Serve: Once both quesadillas are cooked and golden, slice them into wedges and serve immediately with your favorite dipping sauces, such as salsa, guacamole, or sour cream.
