Ingredients
- 4 low-carb tortillas (6–8 inches)
- ½ cup pizza sauce
- 1 cup shredded mozzarella cheese
- ½ cup mini pepperoni slices (or regular pepperoni, sliced)
- 1 teaspoon dried oregano (optional, for extra flavor)
- Olive oil or cooking spray (for crisping)
Instructions
- Start by preheating a large skillet or griddle over medium heat. You can also use a non-stick pan or a griddle to make sure the roll-ups cook evenly and don’t stick.
- Spread a thin layer of pizza sauce evenly over one side of each tortilla. Be sure not to overload it with sauce, as too much liquid can cause the roll-ups to become soggy. Just enough to coat the surface will do.
- Sprinkle about ¼ cup of shredded mozzarella cheese over the pizza sauce on each tortilla. The cheese will melt into the sauce, creating a gooey, cheesy filling. If you’re using regular pepperoni, slice it into small pieces or use mini pepperoni slices and sprinkle them over the cheese evenly.
- Optionally, sprinkle a pinch of dried oregano over the cheese for an extra burst of flavor. This step enhances the pizza-like aroma and taste.
- Roll up each tortilla tightly to secure the cheese and pepperoni inside. You want the roll-ups to be snug so that the filling stays put during cooking.
