Cheesy Pizza Quesadillas

Instructions

1. Assemble the Quesadillas:

  1. Lay out 4 tortillas on a flat surface. Spread about 2 tablespoons of pizza sauce evenly across each one, going nearly to the edges.
  2. Sprinkle approximately ¼ cup of shredded mozzarella cheese over the sauce on each tortilla to form the first cheese layer.
  3. Add your desired toppings — such as pepperoni, cooked sausage, olives, peppers, and mushrooms — spreading them evenly so every bite is filled with flavor.
  4. Sprinkle another ¼ cup of mozzarella cheese on top of the toppings for extra meltiness.
  5. Place the remaining 4 tortillas over the top of each to form the quesadilla “lids.” Press down gently to seal them slightly.

2. Cook the Quesadillas:

  1. Preheat a large skillet or griddle over medium-high heat. Add about ½ tablespoon of oil to the pan and spread it evenly across the surface.
  2. Place one assembled quesadilla into the hot pan. Move it around slightly to ensure the bottom gets coated in the oil for even browning. Brush or drizzle a bit of oil on the top side of the quesadilla as well.
  3. Cook for 3–5 minutes on the first side until the bottom is golden and crispy, and the cheese inside is starting to melt.
  4. Using a large spatula, carefully flip the quesadilla over. Cook for another 3–5 minutes, pressing slightly if needed, until the second side is crisp and the cheese is fully melted.
  5. Repeat with remaining quesadillas, adding more oil to the pan as needed.

3. Slice & Serve:
