Instructions
1. Assemble the Quesadillas:
- Lay out 4 tortillas on a flat surface. Spread about 2 tablespoons of pizza sauce evenly across each one, going nearly to the edges.
- Sprinkle approximately ¼ cup of shredded mozzarella cheese over the sauce on each tortilla to form the first cheese layer.
- Add your desired toppings — such as pepperoni, cooked sausage, olives, peppers, and mushrooms — spreading them evenly so every bite is filled with flavor.
- Sprinkle another ¼ cup of mozzarella cheese on top of the toppings for extra meltiness.
- Place the remaining 4 tortillas over the top of each to form the quesadilla “lids.” Press down gently to seal them slightly.
2. Cook the Quesadillas:
- Preheat a large skillet or griddle over medium-high heat. Add about ½ tablespoon of oil to the pan and spread it evenly across the surface.
- Place one assembled quesadilla into the hot pan. Move it around slightly to ensure the bottom gets coated in the oil for even browning. Brush or drizzle a bit of oil on the top side of the quesadilla as well.
- Cook for 3–5 minutes on the first side until the bottom is golden and crispy, and the cheese inside is starting to melt.
- Using a large spatula, carefully flip the quesadilla over. Cook for another 3–5 minutes, pressing slightly if needed, until the second side is crisp and the cheese is fully melted.
- Repeat with remaining quesadillas, adding more oil to the pan as needed.
