: Cheesy Shrimp-Crab Empanada Bombs

Directions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it for easy cleanup.
  2. Prepare the filling: In a mixing bowl, combine chopped shrimp, crab meat, shredded mozzarella, softened cream cheese, green onions, garlic powder, paprika, and a pinch of salt and pepper. Mix until the filling is creamy and evenly blended.
  3. Assemble the empanadas: Lay out the empanada discs (or pie crust circles). Spoon about 2 tablespoons of the filling into the center of each disc. Fold the dough over to form a half-moon shape and press the edges firmly together. Use a fork to crimp and seal.
  4. Apply egg wash: Brush the tops of each empanada with the beaten egg. This helps give them a glossy, golden finish when baked.
  5. Bake: Place the empanadas on the prepared baking sheet. Bake in the preheated oven for 20–25 minutes or until golden brown and crispy. Rotate the pan halfway through for even browning.
  6. Serve warm with your favorite dipping sauce—try garlic aioli, spicy mayo, or cocktail sauce for extra flavor.
