- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it for easy cleanup.
- Prepare the filling: In a mixing bowl, combine chopped shrimp, crab meat, shredded mozzarella, softened cream cheese, green onions, garlic powder, paprika, and a pinch of salt and pepper. Mix until the filling is creamy and evenly blended.
- Assemble the empanadas: Lay out the empanada discs (or pie crust circles). Spoon about 2 tablespoons of the filling into the center of each disc. Fold the dough over to form a half-moon shape and press the edges firmly together. Use a fork to crimp and seal.
- Apply egg wash: Brush the tops of each empanada with the beaten egg. This helps give them a glossy, golden finish when baked.
- Bake: Place the empanadas on the prepared baking sheet. Bake in the preheated oven for 20–25 minutes or until golden brown and crispy. Rotate the pan halfway through for even browning.
- Serve warm with your favorite dipping sauce—try garlic aioli, spicy mayo, or cocktail sauce for extra flavor.
