- Preheat the oven to 425°F (220°C).
- Wash, peel (if desired), and cut the potatoes into bite-sized cubes.
- Toss the potatoes with olive oil, salt, and pepper until evenly coated.
- Spread them in a single layer on a baking sheet lined with parchment paper or foil.
- Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy on the edges.
2️⃣ Cook the Taco Meat
- While the potatoes roast, heat a large skillet over medium-high heat.
- Add the ground beef and cook until browned, breaking it up with a spatula (about 5–6 minutes).
- Drain any excess grease, then stir in the taco seasoning and ½ cup of water. Simmer for 2–3 minutes until thickened.
3️⃣ Combine & Bake
- Once the potatoes are done, transfer them to a large oven-safe dish or skillet.
- Top with the taco meat mixture and sprinkle generously with shredded cheese.
- Return to the oven and bake for 5–7 minutes, just until the cheese is melted and bubbly.
