Cheesy Taco Potatoes

  1. Preheat the oven to 425°F (220°C).
  2. Wash, peel (if desired), and cut the potatoes into bite-sized cubes.
  3. Toss the potatoes with olive oil, salt, and pepper until evenly coated.
  4. Spread them in a single layer on a baking sheet lined with parchment paper or foil.
  5. Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy on the edges.

2️⃣ Cook the Taco Meat

  1. While the potatoes roast, heat a large skillet over medium-high heat.
  2. Add the ground beef and cook until browned, breaking it up with a spatula (about 5–6 minutes).
  3. Drain any excess grease, then stir in the taco seasoning and ½ cup of water. Simmer for 2–3 minutes until thickened.

3️⃣ Combine & Bake

  1. Once the potatoes are done, transfer them to a large oven-safe dish or skillet.
  2. Top with the taco meat mixture and sprinkle generously with shredded cheese.
  3. Return to the oven and bake for 5–7 minutes, just until the cheese is melted and bubbly.
