- Prepare the Cake
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line it with parchment paper for easy removal later.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until fully combined. This will ensure the dry ingredients are evenly distributed throughout the batter.
- In a separate bowl, whisk the eggs, milk, vegetable oil, and vanilla extract together until smooth and combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix, as this can result in a dense cake.
- Slowly pour in the cherry cola, mixing gently. The batter will be thin, but that’s exactly what you want. The cola helps create a light, moist texture in the finished cake.
- Bake the Cake
- Pour the batter into the prepared cake pan, spreading it out evenly with a spatula.
- Bake the cake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Once the cake is done, remove it from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer the cake to a wire rack to cool completely.
- Prepare the Cherry Cola Glaze
- While the cake is cooling, make the glaze by combining the cherry cola and butter in a small saucepan. Heat over medium heat, stirring occasionally, until the butter has melted and the mixture begins to simmer.
- Once it begins to simmer, remove the saucepan from the heat and whisk in the powdered sugar and vanilla extract until smooth and glossy. If the glaze is too thick, you can add a little more cherry cola to reach your desired consistency.
- Glaze the Cake
- Once the cake has completely cooled, pour the cherry cola glaze over the top of the cake, allowing it to drip down the sides for a beautiful finish.
- Let the glaze set for about 10-15 minutes before slicing, so it has time to firm up a bit.
