Instructions
1️⃣ Prepare the Chicken
- In a bowl, mix 1 tbsp soy sauce, ½ tbsp cornstarch, and a pinch of pepper. Add the sliced chicken and toss to coat evenly. Let marinate for 10–15 minutes while prepping the vegetables.
2️⃣ Make the Stir-Fry Sauce
- In a small bowl, whisk together the remaining soy sauce, oyster sauce, chicken broth, honey (if using), and ½ tbsp cornstarch. Set aside.
3️⃣ Cook the Chicken
- Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
- Add the chicken and stir-fry for 4–5 minutes until browned and cooked through. Remove from the pan and set aside.
4️⃣ Cook the Vegetables
- In the same skillet, add the remaining 1 tbsp oil. Stir in garlic and ginger and cook for 30 seconds until fragrant.
- Add broccoli and red bell pepper. Stir-fry for 3–4 minutes until tender-crisp. You can add a splash of water and cover briefly to steam the broccoli if needed.
