Chicken with Creamy Dijon Sauce and Mashed Potatoes

1️⃣ Get Those Potatoes Ready:

  • Place quartered potatoes in a large pot and cover with cold water. Add a pinch of salt.
  • Bring to a boil and cook for 15–20 minutes, or until fork-tender.
  • Drain well and return to the warm pot to release steam before mashing.

2️⃣ Cook the Chicken:

  • Pat chicken breasts dry and season both sides with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Cook chicken for 5–7 minutes per side until golden brown and fully cooked through (internal temp 165°F / 74°C).
  • Transfer to a plate and set aside. Leave the flavorful bits in the pan!

3️⃣ Whip Up That Dreamy Sauce:

  • Reduce heat to medium and add the butter to the skillet.
  • Once melted, add minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in chicken broth and bring to a simmer, scraping up any browned bits.
  • Stir in heavy cream and Dijon mustard, and let it gently simmer.
