1️⃣ Prepare the Cookie Crust
- Preheat oven to 325°F (160°C).
- In a bowl, combine crushed chocolate chip cookies and melted butter. Stir until the mixture resembles wet sand.
- Press the mixture into the bottom of a 9-inch springform pan, creating an even layer.
- Bake for 10 minutes, then set aside to cool slightly.
2️⃣ Prepare the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Gradually add sugar and vanilla, mixing until fully combined.
- Add eggs one at a time, beating well after each addition. Be careful not to overmix.
- Stir in sour cream and flour until smooth and well combined.
3️⃣ Assemble the Cheesecake
- Pour the cheesecake filling into the prepared cookie crust.
- Use a spatula to smooth the top and ensure the filling is evenly distributed.
- Bake for 45–50 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door slightly ajar. Then transfer to the fridge and chill for at least 4 hours, or preferably overnight.
