Instructions

1. Bake the Cake Layer

  2. Let it cool completely. Trim the top if needed for a level surface.A leveled base helps the mousse spread evenly and prevents uneven layers.

2. Make the Strawberry Mousse

  1. Cook strawberries, sugar, and lemon juice until softened. Blend until smooth and cool slightly.The mixture should be syrupy and fragrant; cooling slightly prevents premature setting when gelatin is added.
  2. Bloom gelatin in cold water, then warm gently until melted. Stir into the strawberry purée.Ensure the gelatin is fully dissolved for a smooth, lump-free mousse.
  3. Whip heavy cream until soft peaks form. Fold into the strawberry mixture until light and airy.Use gentle folding motions to preserve the whipped cream’s volume and create a fluffy mousse texture.
