1. Bake the Cake Layer
- Prepare and bake the cake layer in a round pan according to the package or recipe instructions.Use a pan with straight sides if possible to help the mousse layer sit neatly on top.
- Let it cool completely. Trim the top if needed for a level surface.A leveled base helps the mousse spread evenly and prevents uneven layers.
2. Make the Strawberry Mousse
- Cook strawberries, sugar, and lemon juice until softened. Blend until smooth and cool slightly.The mixture should be syrupy and fragrant; cooling slightly prevents premature setting when gelatin is added.
- Bloom gelatin in cold water, then warm gently until melted. Stir into the strawberry purée.Ensure the gelatin is fully dissolved for a smooth, lump-free mousse.
- Whip heavy cream until soft peaks form. Fold into the strawberry mixture until light and airy.Use gentle folding motions to preserve the whipped cream’s volume and create a fluffy mousse texture.
