1️⃣ Prepare the Cake Layers
- Preheat the oven to 350°F (175°C).A fully heated oven helps the cakes rise efficiently and evenly.
- Mix the dry ingredients (flour, cocoa, baking powder, baking soda, salt, sugar) in a bowl.Whisk thoroughly to remove clumps—especially in the cocoa—and distribute the leaveners uniformly.
- In a separate bowl, mix the eggs, milk, oil, coffee, and vanilla.The hot coffee will slightly warm the mixture, enhancing the cocoa aroma.
- Add the wet ingredients to the dry mixture and beat until you have a smooth batter.The batter will be thin, which helps achieve a moist and tender texture after baking.
- Divide the batter into two equal parts and pour into greased cake pans.Tap the pans lightly to remove air bubbles and level the surface.
- Bake for 25–30 minutes (do the toothpick test).A toothpick inserted into the center should come out clean or with small moist crumbs.
- Let the cakes cool.Cooling completely prevents the ganache from melting or sliding off.
