Christmas Fruit Loaf Cake – Spiced, Festive & Perfectly Moist

👩‍🍳 Instructions

1️⃣ Prepare the Fruit (Optional):

  1. If using rum or brandy, soak the dried fruits in it for several hours or overnight. Drain before using.

2️⃣ Make the Batter:

  1. Preheat oven to 160°C (320°F). Grease and line a loaf pan with parchment paper.
  2. In a large bowl, cream the softened butter and brown sugar until light and fluffy (about 3–5 minutes).
  3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  4. Add the vanilla extract, orange juice, and orange zest. Mix until combined.

3️⃣ Combine Dry Ingredients:

  1. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.

4️⃣ Prepare Fruits & Nuts:

  1. Toss the chopped nuts and dried fruits in 2 tablespoons of flour to help prevent them from sinking in the batter.

5️⃣ Mix & Bake:

  1. Gently fold the dry ingredients into the wet mixture until just combined — avoid overmixing.
  2. Fold in the floured dried fruits and nuts.
  3. Pour the batter into the prepared loaf pan and smooth the top.
  4. Bake for 60–75 minutes, or until a toothpick inserted into the center comes out clean and the top is golden.
  5. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
