1️⃣ Prepare the Fruit (Optional):
- If using rum or brandy, soak the dried fruits in it for several hours or overnight. Drain before using.
2️⃣ Make the Batter:
- Preheat oven to 160°C (320°F). Grease and line a loaf pan with parchment paper.
- In a large bowl, cream the softened butter and brown sugar until light and fluffy (about 3–5 minutes).
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Add the vanilla extract, orange juice, and orange zest. Mix until combined.
3️⃣ Combine Dry Ingredients:
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
4️⃣ Prepare Fruits & Nuts:
- Toss the chopped nuts and dried fruits in 2 tablespoons of flour to help prevent them from sinking in the batter.
5️⃣ Mix & Bake:
- Gently fold the dry ingredients into the wet mixture until just combined — avoid overmixing.
- Fold in the floured dried fruits and nuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60–75 minutes, or until a toothpick inserted into the center comes out clean and the top is golden.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
