Instructions
- Start by opening the can of refrigerated cinnamon rolls and unrolling them. Cut each cinnamon roll into 4-6 bite-sized pieces, depending on how large you want your bites. This is an easy way to create little pieces that will soak up the egg mixture while keeping their delicious swirl intact.
- In a medium-sized bowl, whisk together the eggs, milk, and vanilla extract (if using). The milk helps create a creamy texture, while the vanilla extract adds an extra layer of flavor to complement the cinnamon. Whisk the mixture until it’s smooth and well combined.
- Next, heat a large skillet or griddle over medium heat and add a small amount of butter or oil to prevent sticking. Allow the skillet to get hot, but not smoking, before adding the cinnamon roll pieces.
- Dip each cinnamon roll bite into the egg mixture, making sure each piece is fully coated. Gently place the dipped pieces into the skillet, being careful not to overcrowd the pan. You’ll want to cook the bites in batches to ensure they crisp up evenly on all sides.
