1️⃣ Prepare the Muffin Batter
- Preheat oven to 350°F (175°C). Grease or line a standard 12-cup muffin tin.
- In a medium bowl, whisk together the flour, cinnamon, nutmeg (if using), baking powder, and salt.
- In a separate large bowl, whisk together the melted butter and sugar until combined. Add the egg, milk, and vanilla, and whisk until smooth.
- Gently stir the dry ingredients into the wet ingredients, mixing until just combined. Do not overmix.
2️⃣ Bake
- Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
- Bake for 15–18 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
