Instructions
1. Bake the Potatoes
- Preheat oven to 400°F (200°C).
- Scrub potatoes clean and pat dry. Prick several times with a fork.
- Rub with olive oil or butter and sprinkle with salt.
- Place directly on oven rack or on a baking sheet and bake for 45–60 minutes, or until fork-tender and skins are crispy.
2. Cook the Steak
- Let steaks come to room temperature (about 30 minutes). Pat dry with paper towels.
- Rub with olive oil and season generously with salt and pepper.
- Pan-sear method: Heat a heavy skillet or cast iron pan over high heat. Sear steaks for 3–4 minutes per side for medium-rare, adjusting based on thickness. Add butter, garlic, and herbs in the last minute, spooning over the top.
- Grill method: Preheat grill to high. Sear steaks 3–4 minutes per side, then rest.
