Cod with Lemon Caper Reduction Recipe

Instructions

  1. Prepare the Cod
    1. Pat the cod fillets dry with paper towels to remove excess moisture. This will help achieve a nice sear.
    2. Season both sides of the cod fillets generously with salt and black pepper.
  2. Sear the Fillets
    1. Heat the olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
    2. Once the butter is melted and the oil is hot, add the cod fillets to the skillet. Sear for 3–4 minutes per side until golden brown and the fish flakes easily with a fork.
    3. Transfer the cod fillets to a plate and cover loosely with foil to keep warm.
  3. Make the Lemon Caper Reduction
    1. In the same skillet, melt the remaining 2 tablespoons of butter over medium heat.
    2. Add the minced garlic and sauté for 30 seconds, just until fragrant—be careful not to burn the garlic.
    3. Pour in the white wine, fresh lemon juice, and lemon zest. Use a wooden spoon to scrape up any browned bits from the bottom of the skillet, which will add flavor to the sauce.
    4. Allow the mixture to simmer for 2–3 minutes, reducing slightly to concentrate the flavors.
  4. Add the Capers & Seasoning
    1. Stir in the capers and, if using, the red pepper flakes for a hint of spice.
    2. Taste the sauce and adjust the flavor with additional lemon juice for brightness or a little extra butter for richness, if desired.
  5. Finish the Dish
    1. Return the cod fillets to the skillet, spooning the lemon caper sauce over the top of each fillet.
    2. Simmer gently for 1 minute to heat the cod through and allow the flavors to meld.
  6. Garnish & Serve
    1. Sprinkle fresh chopped parsley over the dish for a burst of color and freshness.
    2. Serve immediately with extra sauce drizzled over each fillet.
