Cowboy Butter Potatoes

Instructions

  1. Start by preheating your oven to 400°F (200°C). A hot oven is essential for achieving crispy, golden-brown potatoes, so be sure to give it enough time to reach the desired temperature while you prepare the potatoes.
  2. Wash and halve the 2 lbs of baby potatoes. Halving the potatoes ensures they cook evenly and allow for more surface area to get crispy. If you prefer smaller pieces, you can quarter the potatoes, but halving them generally works best for an ideal texture. Once halved, place the potatoes in a large mixing bowl.
  3. Drizzle the 3 tablespoons of olive oil over the halved potatoes. Olive oil helps create a crispy, golden crust while also enhancing the flavor of the potatoes. Toss the potatoes in the olive oil until each piece is evenly coated. You want to ensure that the olive oil covers every potato half to promote even cooking and crispiness. Sprinkle in 1 teaspoon of salt, then toss again to distribute the seasoning evenly across all the potatoes. The salt will enhance the natural flavors of the potatoes while contributing to the crispy texture.
  4. Transfer the seasoned potatoes to a baking sheet, spreading them out in a single layer. Make sure there is enough space between the potatoes to allow air to circulate, which helps them crisp up during baking. Avoid overcrowding the pan, as this can lead to steaming rather than roasting the potatoes.
  5. Roast the potatoes in the preheated oven for 25-30 minutes. After about 15 minutes, use a spatula to flip the potatoes so they cook evenly on all sides. You should start to see a golden, crispy exterior forming on the potatoes by this point. Continue roasting until the potatoes are golden and crispy on the outside, with a tender interior when pierced with a fork. Keep an eye on them during the last few minutes to prevent overbaking, as they can become too crispy or dry if left too long.
