Ingredients
- 1 lb ground beef (85% lean): Provides a rich, meaty base without excessive grease
- 1 medium yellow onion, diced: Adds sweetness and depth of flavor
- 1 tablespoon olive oil: For sautéing the onions and browning the beef
- 1 teaspoon garlic powder: Enhances savory notes
- 1 teaspoon onion powder: Boosts onion flavor subtly
- 1 can (15 oz) diced tomatoes with green chilies
- 1 can (15 oz) corn, drained
- 1 cup shredded cheddar cheese
- 2 cups frozen tater tots (or more, depending on your preference)
- Salt and pepper to taste
Instructions
- Begin by heating 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 5-7 minutes, or until the onion becomes soft, translucent, and slightly caramelized. The caramelization process adds sweetness and depth to the flavor of the casserole.
- Once the onions are softened, add the ground beef to the skillet. Cook, breaking it apart with a spoon as it browns, for about 8-10 minutes, or until the beef is fully cooked through. Drain any excess fat from the skillet to prevent the casserole from becoming greasy. Season the beef mixture with 1 teaspoon of garlic powder, 1 teaspoon of onion powder, salt, and pepper to taste.
- Stir in the can of diced tomatoes with green chilies and the drained can of corn. The tomatoes add a slight tang and spiciness, while the corn provides a subtle sweetness and texture to the casserole. Mix everything together well and bring the mixture to a simmer. Let it cook for about 5 minutes, allowing the flavors to meld together and the mixture to thicken slightly.
- Preheat your oven to 375°F (190°C) while the beef mixture is simmering. Lightly grease a 9×13-inch baking dish or casserole dish with cooking spray or a small amount of olive oil to prevent sticking.
