: Cowboy Casserole

Ingredients

  • 1 lb ground beef (85% lean): Provides a rich, meaty base without excessive grease
  • 1 medium yellow onion, diced: Adds sweetness and depth of flavor
  • 1 tablespoon olive oil: For sautéing the onions and browning the beef
  • 1 teaspoon garlic powder: Enhances savory notes
  • 1 teaspoon onion powder: Boosts onion flavor subtly
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 can (15 oz) corn, drained
  • 1 cup shredded cheddar cheese
  • 2 cups frozen tater tots (or more, depending on your preference)
  • Salt and pepper to taste

Instructions

  1. Begin by heating 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 5-7 minutes, or until the onion becomes soft, translucent, and slightly caramelized. The caramelization process adds sweetness and depth to the flavor of the casserole.
  2. Once the onions are softened, add the ground beef to the skillet. Cook, breaking it apart with a spoon as it browns, for about 8-10 minutes, or until the beef is fully cooked through. Drain any excess fat from the skillet to prevent the casserole from becoming greasy. Season the beef mixture with 1 teaspoon of garlic powder, 1 teaspoon of onion powder, salt, and pepper to taste.
  3. Stir in the can of diced tomatoes with green chilies and the drained can of corn. The tomatoes add a slight tang and spiciness, while the corn provides a subtle sweetness and texture to the casserole. Mix everything together well and bring the mixture to a simmer. Let it cook for about 5 minutes, allowing the flavors to meld together and the mixture to thicken slightly.
  4. Preheat your oven to 375°F (190°C) while the beef mixture is simmering. Lightly grease a 9×13-inch baking dish or casserole dish with cooking spray or a small amount of olive oil to prevent sticking.
