Instructions
- Preheat Oven:
Set your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with cooking spray or butter to prevent sticking. - Season and Arrange Chicken:
Season both sides of the chicken breasts with salt and pepper. Place them in an even layer in the prepared baking dish, leaving some space around each for the sauce and vegetables. - Prepare the Sauce:
In a small mixing bowl, whisk together the cream of chicken soup, milk, and paprika until smooth and fully combined. This forms a creamy base that will keep the chicken moist during baking. - Add Broccoli and Sauce:
Scatter the fresh broccoli florets evenly around and between the chicken breasts. Pour the soup mixture over the top, making sure to coat both the chicken and the broccoli. - Add Crunch and Cheese:
Sprinkle the crushed Ritz crackers evenly over the top of the dish. Follow with a generous layer of shredded cheddar cheese to create a rich, gooey topping. - Bake Covered:
Cover the dish tightly with aluminum foil. Bake in the preheated oven for 30 minutes. This allows the chicken to cook gently and retain its juiciness. - Uncover and Finish Baking:
Remove the foil and continue baking for an additional 15–20 minutes, or until the chicken is fully cooked (internal temperature of 165°F / 74°C) and the topping is golden and bubbling. - Serve:
Let the dish rest for 5 minutes before serving. Spoon a portion of chicken, broccoli, and cheesy topping onto each plate to ensure everyone gets a bit of everything. Serve hot and enjoy!
