Cranberry Orange Loaf Cake – Bright, Buttery & Perfectly Tangy

👩‍🍳 Instructions

1️⃣ Preheat Oven:

  1. Preheat your oven to 175°C (350°F).
  2. Grease and flour a 9×5-inch loaf pan or line with parchment paper.

2️⃣ Mix Dry Ingredients:

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3️⃣ Cream Butter and Sugar:

  1. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2–3 minutes.
  2. Beat in the eggs one at a time, then stir in the vanilla and orange zest.

4️⃣ Combine Ingredients:

  1. Alternate adding the dry ingredients and buttermilk into the butter mixture in three additions, starting and ending with the dry.
  2. Toss cranberries with a teaspoon of flour to prevent sinking, then gently fold them into the batter.

5️⃣ Bake:

  1. Pour batter into the prepared loaf pan and smooth the top.
  2. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
