1. Prep the Ingredients
- Boil the eggs ahead of time and let them cool completely. Peel and slice or chop into bite-sized pieces.
- Halve the cherry tomatoes, dice the red onion (if using), and cube the avocados just before mixing to prevent browning.
2. Make the Dressing
- In a small bowl, whisk together lemon or lime juice, olive oil, and Dijon mustard. Season with a pinch of salt and black pepper to taste.
3. Combine the Salad
- In a mixing bowl, gently toss the avocado, eggs, cherry tomatoes, and red onion with the dressing. Fold everything together using a spatula to avoid mashing the avocado too much.
