Creamy Cajun Rigatoni with Beef & Sausage – Bold, Cheesy & Comforting

👨‍🍳 Instructions

1️⃣ Cook the Pasta:

  1. Bring a large pot of salted water to a boil. Add rigatoni and cook until al dente according to package directions.
  2. Drain and set aside. Reserve ½ cup pasta water for later use (optional).

2️⃣ Brown the Meat:

  1. In a large, deep skillet or Dutch oven, cook ground beef and Italian sausage over medium-high heat.
  2. Break up the meat with a spatula and cook until browned and fully cooked, about 7–10 minutes.
  3. Drain excess fat if needed, then return to heat.

3️⃣ Add Seasoning & Liquids:

  1. Stir in Cajun seasoning, Italian seasoning, salt, and pepper.
  2. Pour in milk, chicken broth, and heavy cream. Stir to combine and bring to a simmer.
  3. Let the sauce simmer for 5–7 minutes until slightly thickened and creamy.

4️⃣ Add Cheese & Pasta:

  1. Stir in grated Parmesan cheese and half of the mozzarella. Mix until fully melted and incorporated.
  2. Add the cooked rigatoni and toss to coat evenly. If the sauce is too thick, stir in a splash of reserved pasta water to loosen.
