Creamy Cauliflower Gratin with Crispy Parmesan Breadcrumbs 🧀🌿

👩‍🍳 Directions

1️⃣ Prepare the Cauliflower

  1. Cut cauliflower into small florets.
  2. Steam over simmering water for 3–4 minutes until just tender but still firm. Do not overcook.
  3. Set aside and let cool slightly.

2️⃣ Preheat the Oven

  1. Preheat oven to 400°F (200°C).

3️⃣ Make the Sauce

  1. In a saucepan, melt butter over medium heat.
  2. Whisk in the flour and cook for 1 minute.
  3. Add bay leaf and garlic. Stir for another minute.
  4. Gradually whisk in the milk, followed by nutmeg, salt, and black pepper.
  5. Simmer, stirring constantly, until the sauce thickens (about 5–6 minutes).
  6. Remove bay leaf, then stir in ¼ cup Parmesan. Set aside.
