Creamy Chipotle Shrimp Rice Bowl (Bold, Spicy & Ready in 25 Minutes)

Instructions

1️⃣ Marinate & Sear the Shrimp

  1. In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, cayenne (if using), salt, pepper, and fresh lime juice. Mix until the shrimp are evenly coated.
  2. Heat a skillet over medium-high heat. Once hot, add the shrimp in a single layer.
  3. Sear for 2–3 minutes per side, or until the shrimp are blackened at the edges and cooked through. Remove from heat and set aside.

2️⃣ Make the Creamy Chipotle Sauce

  1. In a small bowl, mix together the mayonnaise, sour cream, blended chipotle peppers, lime juice, honey, garlic powder, and salt. Adjust to taste — add more chipotle for spice or more honey for balance.
