- Prepare the garlic butter:
In a small saucepan over medium heat, melt the butter. Add the minced garlic and cook for 1 minute until fragrant but not browned. - Make the lobster filling:
In a mixing bowl, combine the chopped lobster meat with 2 tablespoons of the garlic butter, mayonnaise, lemon juice, lemon zest, chives, parsley, salt, and pepper. Toss gently until evenly coated. - Toast the rolls:
Brush the remaining garlic butter inside and outside each roll. Toast in a skillet over medium heat until golden and crisp on all sides. - Assemble the rolls:
Fill each toasted roll generously with the creamy lobster mixture. Garnish with a pinch of paprika and extra herbs if desired. - Serve immediately while warm, with chips, a side salad, or lemon wedges on the side.
