- 2 lobster tails (steamed or boiled, meat removed and chopped)
- 1 tbsp olive oil or butter (for sautéing the lobster)

Instructions
- Cook the Fettuccine: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain the pasta, reserving 1 cup of pasta water for later use, and set aside.
- Prepare the Alfredo Sauce: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn the garlic. Add the heavy cream and bring it to a gentle simmer. Stir occasionally, allowing the cream to thicken slightly, about 4-5 minutes.
- Add the Cheese: Stir in the grated Parmesan and shredded mozzarella cheese into the sauce, continuing to stir until the cheese melts and the sauce becomes creamy. Season the sauce with salt, pepper, and nutmeg (if using) to taste. If the sauce becomes too thick, add a little bit of the reserved pasta water to reach your desired consistency.
- Prepare the Lobster: While the sauce is simmering, heat 1 tablespoon of olive oil or butter in a separate pan over medium heat. Add the chopped lobster meat and sauté for 2-3 minutes, just until heated through. You can also season the lobster with a pinch of salt and pepper for extra flavor.
- Combine the Pasta and Sauce: Add the cooked fettuccine pasta to the Alfredo sauce and toss gently to coat the pasta in the creamy sauce. If needed, add some of the reserved pasta water to help the sauce adhere to the pasta.
- Assemble the Dish: Gently fold the sautéed lobster into the pasta, being careful not to break up the lobster too much. Stir everything together so the lobster is evenly distributed throughout the creamy pasta. Taste and adjust the seasoning, adding more salt or pepper if needed.
- Serve: Plate the lobster fettuccine Alfredo and garnish with freshly chopped parsley for a pop of color and freshness. Serve immediately with extra Parmesan cheese on the side for those who like a little more cheese.
