Creamy Shrimp and Mussels with Garlic Bread

Instructions

    1. Prepare the Garlic Bread: Preheat the oven to 375°F (190°C) so it is fully heated when the bread goes in. In a small bowl, stir together the melted butter, minced garlic, chopped parsley, and a light pinch of salt until the mixture is cohesive. Brush each bread slice generously with the garlic butter mixture, ensuring the surface is well coated for maximum flavor. Arrange the slices on a baking sheet in a single layer. Bake for 10–12 minutes, or until the edges turn golden and the tops become crisp and aromatic. Set aside to cool slightly while you prepare the seafood.
    2. Cook the Seafood: In a large skillet, heat the olive oil together with the butter over medium-high heat until the butter melts and begins to foam lightly. Add the minced garlic and sauté for about 1 minute, stirring to prevent browning; it should become fragrant without turning dark. Add the shrimp and mussels directly to the skillet. Sauté the shrimp for 2–3 minutes on each side until they turn pink and opaque. As the shrimp cook, allow the mussels to steam open—this typically takes 3–5 minutes. Discard any mussels that do not open, as they are not safe to eat.
    3. Create the Cream Sauce: Once the seafood is cooked, pour in the heavy cream, chicken broth, and white wine if using. Stir well to loosen any flavorful bits from the bottom of the skillet. Add the smoked paprika, black pepper, and salt, then allow the sauce to simmer gently for 3–5 minutes. During this time, the sauce will reduce slightly and begin to thicken. Stir in the grated Parmesan and cook for an additional 2 minutes, allowing the cheese to melt and the sauce to develop a smooth, creamy consistency that clings beautifully to the seafood.
