Instructions
1. Make the Creamy Filling
- In a medium bowl, combine softened cream cheese and sour cream (or Greek yogurt). Beat or stir until smooth and creamy. A hand mixer works well here for a fluffier texture.
- Add the taco seasoning and mix thoroughly until fully incorporated and evenly colored.
2. Add the Mix-Ins
- Stir in the shredded cheese, red bell pepper, black beans, green onions, and cilantro (if using). Mix until everything is evenly distributed throughout the filling.
- Taste and adjust seasoning, if desired — add a pinch of salt or extra taco seasoning for more flavor.
3. Assemble the Pinwheels
- Lay one tortilla flat on a clean surface. Spread about 3–4 tablespoons of the filling evenly over the entire surface, all the way to the edges for full coverage.
- Roll the tortilla up tightly into a log. Be careful not to press too hard or the filling will squeeze out the sides.
- Repeat with remaining tortillas and filling.
