Creamy Taco Pinwheels (Easy No-Bake Appetizer)

Instructions

1. Make the Creamy Filling

  1. In a medium bowl, combine softened cream cheese and sour cream (or Greek yogurt). Beat or stir until smooth and creamy. A hand mixer works well here for a fluffier texture.
  2. Add the taco seasoning and mix thoroughly until fully incorporated and evenly colored.

2. Add the Mix-Ins

  1. Stir in the shredded cheese, red bell pepper, black beans, green onions, and cilantro (if using). Mix until everything is evenly distributed throughout the filling.
  2. Taste and adjust seasoning, if desired — add a pinch of salt or extra taco seasoning for more flavor.

3. Assemble the Pinwheels

  1. Lay one tortilla flat on a clean surface. Spread about 3–4 tablespoons of the filling evenly over the entire surface, all the way to the edges for full coverage.
  2. Roll the tortilla up tightly into a log. Be careful not to press too hard or the filling will squeeze out the sides.
  3. Repeat with remaining tortillas and filling.
