Crispy Chicken & Avocado Salad with Lemon-Honey Dressing

  • ½ cup breadcrumbs
  • 1 egg, beaten
  • Salt & black pepper to taste
  • ½ tsp paprika (optional)

For the Dressing:

  • 2 tbsp olive oil 🫒
  • 1 tbsp lemon juice 🍋
  • 1 tsp honey 🍯
  • Salt & pepper to taste

👩‍🍳 Instructions

1️⃣ Prepare the Chicken:

  1. Season chicken strips with salt, black pepper, and optional paprika.
  2. Dip each strip in the beaten egg, then coat evenly with breadcrumbs.

2️⃣ Fry Until Golden:

  1. Heat oil in a skillet over medium heat.
  2. Fry the coated chicken strips for about 3–4 minutes per side, or until golden brown and cooked through.
  3. Transfer to a paper towel-lined plate to drain any excess oil.
