Step 1: Marinate the Chicken
- In a bowl or resealable bag, add chicken drumsticks and pour over the buttermilk.
- Cover and refrigerate for at least 2 hours or overnight for best results.
Step 2: Prep the Coating
- In a shallow dish, combine flour, cornstarch, salt, pepper, garlic powder, paprika, and cayenne (if using).
- Remove chicken from the buttermilk and let excess drip off. Dredge each piece in the flour mixture, pressing to adhere a thick coating. Let rest on a wire rack for 10–15 minutes.
Step 3: Fry the Chicken
- Heat oil in a deep skillet or Dutch oven to 350°F (175°C).
- Fry chicken in batches for 10–12 minutes, turning occasionally, until golden brown and the internal temp reaches 165°F (74°C).
- Transfer to a paper towel-lined plate or wire rack to drain excess oil.
