Crispy Fried Chicken & Golden Fries – Classic Comfort on a Plate

Instructions

Step 1: Marinate the Chicken

  1. In a bowl or resealable bag, add chicken drumsticks and pour over the buttermilk.
  2. Cover and refrigerate for at least 2 hours or overnight for best results.

Step 2: Prep the Coating

  1. In a shallow dish, combine flour, cornstarch, salt, pepper, garlic powder, paprika, and cayenne (if using).
  2. Remove chicken from the buttermilk and let excess drip off. Dredge each piece in the flour mixture, pressing to adhere a thick coating. Let rest on a wire rack for 10–15 minutes.

Step 3: Fry the Chicken

  1. Heat oil in a deep skillet or Dutch oven to 350°F (175°C).
  2. Fry chicken in batches for 10–12 minutes, turning occasionally, until golden brown and the internal temp reaches 165°F (74°C).
  3. Transfer to a paper towel-lined plate or wire rack to drain excess oil.
