Deep-Fried Shrimp Alfredo Burrito Bites

  1. Prepare the Shrimp Mixture:
    In a medium bowl, combine the peeled and deveined shrimp with a pinch of salt and freshly ground pepper. Add 1 cup of Alfredo sauce and mix well until the shrimp are fully coated. Let this sit while you prepare the remaining components—this allows the shrimp to absorb the creamy, seasoned flavor.
  2. Assemble the Burritos:
    Lay a flour tortilla flat on a clean surface. Spoon an even portion of the shrimp and Alfredo mixture into the center of the tortilla, avoiding overfilling to prevent breakage during frying. Sprinkle a generous handful of shredded mozzarella cheese over the shrimp.
  3. Roll the Burritos:
    Fold in the sides of the tortilla over the filling, then roll from the bottom up into a tight burrito shape. Repeat with the remaining tortillas and filling. Make sure they’re tightly sealed to prevent any leaks during frying.
  4. Breading:
    Place the beaten eggs in one shallow dish and the breadcrumbs in another. Dip each burrito first in the egg, coating all sides, then roll it firmly in the breadcrumbs to create a crunchy exterior. Press lightly to ensure the breadcrumbs stick.
