Prepare the Chicken:
If you don’t already have cooked chicken, you can quickly cook two chicken breasts by seasoning them with salt and pepper and pan-frying for about 7-8 minutes per side, or until they reach an internal temperature of 165°F (75°C). Once cooked, shred or dice the chicken into bite-sized pieces.
Mix the Ingredients:
In a large mixing bowl, combine the shredded chicken, celery, red onion, and cucumber.
Make the Dressing:
In a small bowl, mix together the Greek yogurt (or mayo), Dijon mustard, lemon juice, honey, salt, and black pepper. Stir until smooth and well-combined.
Combine:
Pour the dressing over the chicken mixture and toss until everything is evenly coated.
