👩🍳 Preparation
1️⃣ Blend the Wet Ingredients:
- In a blender, add the eggs, chopped carrots, sugar, and oil.
- Blend on high speed for about 3 minutes, or until the mixture is completely smooth and the carrots are fully crushed.
2️⃣ Mix the Batter:
- Pour the blended mixture into a large mixing bowl.
- Gradually add the flour, mixing with a whisk or spatula until fully incorporated and smooth. Do not overmix.
- Finally, add the baking powder and gently stir just until combined.
3️⃣ Bake:
- Preheat your oven to 180°C (350°F).
- Grease and flour a medium-sized cake pan (round, square, or bundt-style).
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
