Step 1: Prepare the Filling
In a large mixing bowl, combine the minced meat, chopped carrots, chopped broccoli, chopped mushrooms, soy sauce, oyster sauce, cooking wine, cooking oil, cornstarch, and black pepper. Mix everything well until all the ingredients are fully incorporated. The cornstarch helps bind the mixture, ensuring the filling stays together when you wrap the dumplings. Taste the filling and adjust seasoning if needed. The vegetables should be finely chopped to ensure an even texture in the filling.
Step 2: Fill the Wonton Wrappers
Take a wonton wrapper and place a small spoonful of the filling in the center. Be careful not to overfill the wrapper, as this can make it difficult to seal. The amount of filling should be just enough to form a small mound in the center, leaving enough space around the edges to seal the dumpling.
Step 3: Seal the Dumplings
Using your finger, dab a small amount of water around the edges of the wrapper. This will help the wrapper stick together when folded. Fold the wrapper over the filling to form a half-moon shape (or another shape if you prefer). Press the edges together firmly to seal the dumpling. You can also pleat the edges for a decorative touch, ensuring the dumpling is securely closed. Repeat the process with the remaining wrappers and filling.
