1️⃣ Prepare the Vegetables
- Wash and chop the broccoli florets into small, bite-sized pieces. If you prefer a finer texture, you can also finely chop the broccoli or even pulse it in a food processor for a more delicate texture.
- Shred the carrots using a box grater or pre-shredded carrots from the store for convenience. Set aside.
- Finely dice the red onion to add a sharp bite to the salad. If you prefer a milder flavor, you can soak the diced onion in cold water for a few minutes to mellow out its intensity.
2️⃣ Make the Dressing
- In a separate bowl, combine the mayonnaise with the apple cider vinegar (or lemon juice), and honey or maple syrup (if using). The vinegar (or lemon juice) adds a tangy element, while the honey provides a slight sweetness to balance the flavors.
- Stir everything together until smooth. Season with a pinch of salt and pepper to taste, adjusting to your preference.
3️⃣ Toss the Salad
- In a large mixing bowl, combine the broccoli, shredded carrots, and diced red onion.
- Pour the creamy dressing over the vegetables and toss everything together until well coated. The creamy dressing will bring all the ingredients together and give the salad a rich, delicious flavor.
