Easy Healthy Creamy Broccoli Salad with Carrots & Red Onion

1️⃣ Prepare the Vegetables

  1. Wash and chop the broccoli florets into small, bite-sized pieces. If you prefer a finer texture, you can also finely chop the broccoli or even pulse it in a food processor for a more delicate texture.
  2. Shred the carrots using a box grater or pre-shredded carrots from the store for convenience. Set aside.
  3. Finely dice the red onion to add a sharp bite to the salad. If you prefer a milder flavor, you can soak the diced onion in cold water for a few minutes to mellow out its intensity.

2️⃣ Make the Dressing

  1. In a separate bowl, combine the mayonnaise with the apple cider vinegar (or lemon juice), and honey or maple syrup (if using). The vinegar (or lemon juice) adds a tangy element, while the honey provides a slight sweetness to balance the flavors.
  2. Stir everything together until smooth. Season with a pinch of salt and pepper to taste, adjusting to your preference.

3️⃣ Toss the Salad

  1. In a large mixing bowl, combine the broccoli, shredded carrots, and diced red onion.
  2. Pour the creamy dressing over the vegetables and toss everything together until well coated. The creamy dressing will bring all the ingredients together and give the salad a rich, delicious flavor.
