Step 1: Prep the Ingredients
- Cube the cheddar and mozzarella into bite-sized chunks.
- Quarter the salami slices into small bite-size pieces.
- Slice or halve pickles, depending on size and preference.
Step 2: Make the Marinade
- In a small bowl or jar, whisk together olive oil, vinegar, Dijon mustard, minced garlic, dried herbs, red pepper flakes, salt, and pepper until well emulsified.
Step 3: Assemble the Appetizer
- In a large bowl or shallow container, gently toss together the cheeses, salami, and pickles.
- Pour the marinade over the mixture and toss to coat evenly.
- Cover and refrigerate for at least 1 hour, or up to 24 hours. Stir occasionally if marinating longer.
