- Start the base: In a mixing bowl, combine the cream cheese and peanut butter. Mix until completely smooth and unified, scraping the bowl as needed so no streaks remain. The mixture should look glossy and thick. (If using cream cheese that’s been grated and is still cool, blend gently at first to avoid small lumps, then mix until silky.)
- Add sweetness & structure: Sift in the powdered sugar and mix on low until incorporated, then increase speed briefly just until the filling turns creamy and holds soft peaks. Avoid overmixing—you want a smooth, spreadable consistency that will set nicely once chilled.
