Easy Rotel Tacos

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning (mild, medium, or hot, depending on your preference)
  • 1 can (10 oz) Rotel diced tomatoes with green chilies (drained)

Instructions

  1. In a large skillet, cook the ground beef over medium-high heat, breaking it up with a spoon as it cooks. Continue cooking until the beef is browned and no longer pink, about 6-8 minutes. Once cooked, drain any excess fat from the skillet.
  2. Sprinkle the taco seasoning over the cooked beef and stir to evenly coat. Follow the seasoning packet’s instructions for adding water (usually about 2/3 cup), and stir to combine. Let the mixture simmer for a few minutes until the sauce thickens slightly and the flavors meld together.
  3. Once the taco meat is ready, stir in the drained can of Rotel diced tomatoes with green chilies. The tomatoes and chilies will add a juicy texture and a touch of heat to the beef mixture. Let everything simmer together for another 3-5 minutes, allowing the flavors to blend and the mixture to heat through.
