1️⃣ Preheat the Oven
- Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease it.
2️⃣ Prepare the Honey Garlic Sauce
- In a small bowl, whisk together honey, minced garlic, soy sauce, apple cider vinegar, and red pepper flakes (if using). Set aside.
3️⃣ Season the Chicken
- Place chicken thighs in a bowl or on the prepared sheet pan.
- Drizzle with 2 tablespoons olive oil, then season with salt and pepper.
- Brush or spoon half of the honey garlic sauce over the chicken, reserving the rest for later.
4️⃣ Add the Vegetables
- Arrange the broccoli, carrots, bell pepper, and zucchini around the chicken on the sheet pan.
- Drizzle with olive oil and season with salt and pepper. Toss vegetables to coat evenly.
