Instructions
1️⃣ Cook the Noodles
- Bring a large pot of salted water to a boil. Add lasagna noodles and cook until just al dente, according to package instructions.
- Drain and carefully lay noodles flat on a greased surface or parchment paper to cool. Avoid overlapping to prevent sticking.
2️⃣ Make the Filling
- In a large mixing bowl, combine the crab meat, ricotta cheese, Parmesan, mozzarella, beaten egg, chopped green onions, minced garlic, and lemon juice.
- Season with salt and pepper to taste. For added flavor depth, mix in a pinch of Old Bay seasoning or cayenne if desired.
- Stir gently until fully combined, being careful not to break up the crab too much. Set aside.
3️⃣ Make the Parmesan Sauce
- In a medium saucepan, melt butter over medium heat. Add the flour and whisk continuously for 1–2 minutes to form a light roux with no raw flour taste.
- Slowly pour in the milk or half-and-half, whisking constantly to ensure a smooth consistency. Continue cooking, stirring often, until the mixture thickens slightly—about 5–7 minutes.
- Stir in the Parmesan cheese, season with salt, pepper, and optional nutmeg. Mix until cheese melts and sauce is creamy. Remove from heat.
