Fresh Crab Lasagna Roll-Ups with Creamy Parmesan Sauce

Instructions

1️⃣ Cook the Noodles

  1. Bring a large pot of salted water to a boil. Add lasagna noodles and cook until just al dente, according to package instructions.
  2. Drain and carefully lay noodles flat on a greased surface or parchment paper to cool. Avoid overlapping to prevent sticking.

2️⃣ Make the Filling

  1. In a large mixing bowl, combine the crab meat, ricotta cheese, Parmesan, mozzarella, beaten egg, chopped green onions, minced garlic, and lemon juice.
  2. Season with salt and pepper to taste. For added flavor depth, mix in a pinch of Old Bay seasoning or cayenne if desired.
  3. Stir gently until fully combined, being careful not to break up the crab too much. Set aside.

3️⃣ Make the Parmesan Sauce

  1. In a medium saucepan, melt butter over medium heat. Add the flour and whisk continuously for 1–2 minutes to form a light roux with no raw flour taste.
  2. Slowly pour in the milk or half-and-half, whisking constantly to ensure a smooth consistency. Continue cooking, stirring often, until the mixture thickens slightly—about 5–7 minutes.
  3. Stir in the Parmesan cheese, season with salt, pepper, and optional nutmeg. Mix until cheese melts and sauce is creamy. Remove from heat.
