- Prepare the Cake
- Preheat your oven to 350°F (175°C). Grease and flour a 24 cm round cake pan, or line it with parchment paper for easy removal of the cake after baking.
- In a large mixing bowl, beat the eggs and granulated sugar together using an electric mixer on medium speed for about 3-4 minutes, or until the mixture becomes light, fluffy, and pale in color. This will help the cake achieve a light and airy texture.
- Once the eggs and sugar are well-beaten, add the warm water and vanilla extract, continuing to mix until fully incorporated.
- In a separate bowl, sift together the flour, baking powder, and salt. This ensures the dry ingredients are evenly distributed and prevents lumps.
- Gradually add the dry ingredients to the wet mixture, folding gently to avoid deflating the batter. Once the batter is smooth, add the vegetable oil and mix until fully combined.
- Bake the Cake
- Pour the cake batter into the prepared cake pan, spreading it evenly with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Be sure to check for doneness by gently pressing on the cake; it should spring back when touched.
- Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before assembling the cake.
- Prepare the Whipped Cream Frosting
- In a chilled mixing bowl, whip the heavy cream using an electric mixer on medium-high speed until soft peaks form.
- Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form. Be careful not to overwhip the cream, as it can turn into butter.
- Assemble the Cake
- Once the cake has cooled, carefully slice it into three even layers using a serrated knife. If necessary, level the tops of the cakes to make them flat.
- Place the first layer of cake on a serving platter. Spread a generous layer of whipped cream over the top of the cake.
- Top the whipped cream with a layer of fresh mixed berries. You can lightly toss the berries with a little lemon juice for extra freshness if desired.
- Repeat with the second layer of cake, followed by whipped cream and more fresh fruit.
- Top with the third layer of cake, and spread a final layer of whipped cream on the top and sides of the cake, smoothing it out with a spatula.
- Garnish and Serve
- Decorate the top of the cake with additional fresh fruit, such as sliced strawberries, blueberries, or raspberries for a colorful, festive look.
- Chill the assembled cake in the refrigerator for at least 1-2 hours before serving to allow the whipped cream to firm up and set.
