Funnel Cake Bites

Instructions

    1. Prepare the Batter: In a mixing bowl, whisk together the flour, baking powder, salt, and sugar, ensuring the dry ingredients are fully combined and free of lumps. In a separate bowl, whisk the egg, milk, and vanilla extract until smooth. Gradually pour the wet mixture into the dry ingredients, stirring gently as you go. Mix just until the batter becomes smooth and cohesive—overmixing can make the bites dense, so stop as soon as the batter comes together with no dry streaks.
    2. Heat the Oil: Pour about 2 inches of vegetable oil into a deep saucepan or heavy pot. Heat the oil to 375°F (190°C). Use a thermometer for accuracy if possible; oil that’s too cool will cause the bites to absorb grease, while oil that’s too hot may brown the exterior before the inside cooks through. Allow the oil to preheat fully so each batch fries evenly.
    3. Fry the Bites: Using a small spoon, cookie scoop, or teaspoon, carefully drop small spoonfuls of batter into the hot oil. Fry in small batches to avoid overcrowding, which helps maintain the oil temperature. Let the bites cook for 1–2 minutes per side, turning them once they reach a deep golden color. They should puff slightly as they fry and feel light when lifted from the oil. Transfer the cooked bites to a paper towel-lined plate to drain off excess oil.
