Garlic Butter Chicken & Rice Casserole 🍗🧄🍚

👩‍🍳 Instructions

1️⃣ Prep the Casserole

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch (23×33 cm) baking dish.
  3. In the baking dish, whisk together rinsed rice, melted butter, chicken broth, minced garlic, onion powder, and a pinch of salt and pepper.

2️⃣ Add the Chicken

  1. Season chicken with paprika, salt, pepper, and dried thyme if using.
  2. Place the chicken pieces directly on top of the rice mixture.

3️⃣ Bake

  1. Cover the dish tightly with foil and bake for 45 minutes.
  2. Remove foil and bake an additional 15–20 minutes, or until the chicken is cooked through (internal temp 165°F/74°C) and rice is tender.
  3. If desired, broil for 2–3 minutes at the end to crisp the top slightly.
